Ingredients You'll Need:
2 lbs (900 g) plums ~8-10 medium sized
200g (1 cup) granulated sugar
if you go for this 2 lemons(utilized) and a half cup of lemon juice
Instructions:
1 cup coconut flakes 2 tbsp cocoa powder or carob 3 Medjool dates, pitted (regular deglet are okay) Pinch of sea salt Shredded coconut for coating decorations¼ cup water if more liquid is needed to moisten the batter.
1/2 teaspoon ground cinnamon (optional, for a little kick)
How to Make It:
1. Prep Your Plums
Wash your plums really well to start. Cut them in half and scoop out the seeds. If you like a smooth jam, skin the plums as well - however these are not required. It will give some great texture to your soup and add flavor as well!
2. Cook the Plums
Place plums in a large saucepan or pot. Slightly crush them with a potato masher or fork if needed. When adding the lemon juice, which will aid in cutting through some of that sweetness, making it more savory.
3. Let the Magic Begin
Turn the heat to medium and let it come to a gentle boil. Simmer and stir occasionally for 10-15 minutes. Plums will start to break down and the mixture will thicken. This is where the magic now begins!
4. Sweeten the Deal
When the plums begin to collapse, swirl in your refined sugar. Cook and stir for another 10-15 minutes. This is the time your jam begins to taste sweet and desirable.
5. Test for Perfection
Test that the jam is set: put a small spoonful of it on an cold plate and leave for 1 minute. Check the jam by running your finger through itá…³it should hold its shape and wrinkle slightly. If it is not, cook a bit longer and check again.
6. Spice It Up (Optional)
Add some ground cinnamon for a bit more punch. So you could see this as a way of balancing out the plums á…³ giving it that warm, cozy feel. Add a little bit of water to thin out the jam (this is optional, but if you like your jam on the thinner side).
7. Jar It Up
Pour into sterilized jars, leaving 1/4 inch of headspace while it is still hot. Place the lids and screw them on then wipe clean any spillage on the rims of jars. Cover with lids and process for 5-10 minutes in boiling water bath to seal jars.
8. Cool and Store
Let the jars cool in a dry towel or on racks completely. Keep your Plum jam refrigerated. Refrigerate after opening.
