Here's a recipe for Split Pea Soup that serves 4-6 people:

Ingredients:

1. 1 pound dried split peas
2. 1 onion, chopped
3. 2 cloves garlic, minced
4. 2 carrots, peeled and chopped
5. 2 celery stalks, chopped
6. 1 bay leaf
7. 6 cups chicken or vegetable broth
8. 1 ham hock or smoked turkey leg (optional)
9. Salt and pepper, to taste
10. 2 tablespoons olive oil

Instructions:

Rinse the split peas in a colander and pick out any debris.
In a huge pot, warm the olive oil over medium warm. Add the onions, garlic, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.
Add the bay leaf, split peas, chicken or vegetable broth, and ham hock or smoked turkey leg, if using. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the peas are tender and the soup is thick and creamy.
Remove the bay leaf and ham hock or turkey leg, if using. Discard the bay leaf and remove any meat from the ham hock or turkey leg, chop it up, and add it back into the soup.
Using an immersion blender or in batches in a regular blender, puree the soup until smooth.
Season with salt and pepper to taste.
Serve the soup hot, garnished with croutons or chopped fresh parsley, if desired.
Enjoy your delicious split pea soup!
