- 1 teaspoon of Dijon mustard
- Salt and pepper to taste

Instructions:
1. Begin by bubbling the potatoes in a huge pot of salted water until delicate. This more often than not takes around 15-20 minutes. Before peeling the potatoes, drain and cool slightly. Cut the potatoes into slices or cubes, depending on your preference.
2. Broil the bacon in a dish until fresh. When cooked, remove the bacon from the pan and set aside, dripping the bacon into the pan.
3. To the same pan dripping in bacon, add the chopped onion and cook over medium heat until translucent and lightly browned. This will take roughly 5 minutes.
4. In a small bowl, mix vinegar, water, sugar, mustard, salt and pepper. Add the mixture to the pan with the onion and stir to combine. Cook the mixture for a few minutes until it thickens slightly.
5. Add the cooked potatoes and bacon to the pan and gently stir everything to distribute the seasoning evenly over the potatoes. Cook for another 2-3 minutes to get everything warmed through.
